Potatoes - It's important to pick the right potato for the job. In this case, it's a Yukon Gold or yellow potato. They're thin-skinned, so no need to peel them. The potato is denser when raw, but has a nice creamy texture after being roasted. I tried this recipe with russets and while they were fluffy on the inside, the skins got wrinkly and chewy fast. Yukons hold up to reheat too!
Seasonings - I use dry seasonings for these crispy little nuggets. Most importantly for flavor, but they also help with the crunch factor. In the recipe, I put a range for salt and pepper. It's totally okay to taste the raw potatoes after seasoning to see what you think. It will taste a little saltier than the cooked version because it hasn't absorbed into the potato flesh yet.

The details
- Gather all your tools and ingredients and get the seasonings and oil measured out. Preheat the oven to 450°. Set out a lined sheet pan. I prefer parchment for this, potatoes tend to stick to foil.
- Chop the potatoes into even-sized, one bite, pieces then put them into a great big bowl. Like one that could hold 3-4 times that recipe of potatoes. Pour the olive oil over the potatoes and toss them around by either using a long-handled spoon, your hands, or shaking in the bowl. Sprinkle the seasonings over the potatoes and repeat the process.
- The purpose of the big bowl is to give the potatoes enough air around them that the oil and seasonings can completely coat each and every one. You will get the tastiest and crispiest batch this way.
- Dump the potatoes out on the sheet pan, spreading them out so they all have enough room. Put them in the oven for 25 minutes.
- When the time is up, toss and flip the potatoes around the pan and roast them for another 15 to 20 minutes.
- AIR FRYER DIRECTIONS: Roast in the air fryer at 400° and check at 15 minutes. Stir around and add additional time if needed.

- 2 lb Yukon Gold potatoes, or yellow potatoes, chopped into even pieces
- ¼ cup olive oil
- 1 tablespoon onion powder
- 1 tablespoon smoked paprika
- 1 teaspoon garlic powder
- 1 - 2 teaspoons salt
- ½ - 1 teaspoon pepper
Instructions
- Preheat the oven to 450°.
- In a large bowl toss the chopped potato pieces with the oil and then the seasonings.
- Pour them out onto a lined sheet pan spreading them out as much as possible.
- Roast for 25 minutes and then flip and stir the potatoes
- Roast for 15 - 20 minutes more.
