Breakfast for dinner or dinner for breakfast? When I was young, breakfast for dinner was an exciting event. Waffles with maple syrup and fried eggs—and at the wrong time of day! It felt indulgent. As the years have passed I've come to prefer dinner for breakfast as well. And I almost always choose to celebrate with a juicy Brunch Burger topped with a runny fried egg.
This Brunch Burger is loaded with all the best parts of brunch. It's made with a brioche bun, juicy, flavorful patty, maple bacon, hashbrown coins, and a runny fried egg. This sandwich will make a mess, but it'll be worth it!

Read below about a few of the ingredients used to make Brunch Burgers.
Beef patties - You can buy premade patties or make your own. Or, if you prefer a plant-based option, go for it! Recently, I made this delicious Loco Moco and used the leftover patties from that. It was great! If you like cheeseburgers, here's a cheese loaded griddle patty that'll rock your world.
Brioche buns - This is no everyday burger, just like brunch isn't a standard breakfast. Elevate your cheeseburger with a light and lovely brioche bun. Be sure to toast it with butter before adding the toppings!
Cheese - I chose provolone for its deep, smokey flavor, but use whatever melting cheese you prefer! Cheddar, havarti, swiss, and gruyere would all be great.
Baby gold potatoes - I chose baby potatoes for the hashbrown coins. If you are using a larger potato, quarter it longways and slice thin. You want flat slices of potato small enough to fit on the burger.
Maple bacon - The extra sweet smokey bacon is the perfect accompaniment to this brunch burger; bringing home the bacon and the syrup!

How to make Brunch Burgers
Making the hashbrown coins
- Warm a nonstick skillet on the stove over medium heat. Add one tablespoon of oil to the pan, followed by the sliced potatoes, onions, and a few pinches of salt and pepper.
- Cook the potatoes until they have started to brown a little on one side, stirring, flipping them over, and covering the skillet with a lid.
- Continue to cook the potatoes for about five more minutes, then remove the lid and test a potato by piercing it with a fork. If the potatoes have softened, move on to the next step; otherwise, add the lid back for a few more minutes.
- As soon as you can pierce the potatoes with a fork, stir and flip them again. Continue to cook the potatoes and onions until they're brown and starting to crisp a little. Then, remove them from the heat.
Preparing the rest of the Brunch Burger
- While the potatoes are cooking, combine the mayonnaise and Dijon mustard and set aside.
- Start cooking the burger patties however you prefer. You can reuse the potato skillet or cook them on the grill.
- While the burger patties are cooking, warm a nonstick skillet on the stove over medium-high heat. Butter both sides of the buns and lay them face down in the pan. Toast them for a few minutes and then set them aside. Wipe out the pan, add a teaspoon of oil, and crack the eggs into the pan. Season with a pinch of salt and pepper.
- For runny eggs, cook them in the pan until the whites start to set, then add a few tablespoons of water to the pan and cover with a lid. Cook for 1-2 minutes more, then lift the lid to check if all the whites have thoroughly cooked. Remove the egg from the pan before the yellow parts start to cook.

Substitutions and Variations for Brunch Burgers
- Spicy - Add a spicy kick with some Mama Lil's Peppers or sliced jalapeno added to the hash.
- Gluten Free - use gluten-free buns instead of white bread buns to make this a gluten-free brunch burger.
- Vegetarian - the beef hamburger can be replaced with a plant-based burger to make this vegetarian.
- No bacon - Smokey slab ham is a good sub for bacon. Grill it with the burger patty to get some nice caramelization and create a sweeter flavor.
Leftover Brunch Burgers
- A fully assembled burger doesn't last long, but you can store all the parts to remake the brunch burger again.
- Cooked beef patties can be stored in a sealed container in the refrigerator for up to 4 days or in the freezer for 6 months.
- Leftover hashbrown coins can be stored in a sealed container in the refrigerator for 2 days. Do not freeze.
Hot Tip!
Toast the buns with butter before adding the toppings to add flavor and crispiness. Use about one teaspoon of butter per bun, and toast in a pan for 2-3 minutes. Not only will this add extra flavor to the sandwich, but using toasted buns or bread will help keep the moist ingredients from soaking through the bun—at least for a moment!
