Smash Breakfast Tacos are a delicious feast for the senses that will surely leave you satisfied.
I'm sure most of us have tried a smash burger at some point. But have you heard of the latest food trend? It involves smashing ground meat into a tortilla or pita and frying it up for a quick taco or pita wrap. Here, I'm stealing that move and one-upping it with a breakfast twist. Filling the inside with egg, then adding additional cheese on the outside of the tortilla shell to create a crispy cheese crust. The results are to die for!!

Tortillas - A 6" tortilla is the perfect size to match the egg for this taco. I prefer yellow corn tortillas, but use what you like. I have not tested this with flour tortillas because the crispy fried corn shell has the flavor we're looking for.
Cheese - Freshly shredded cheese is always best. It melts perfectly and is not coated with anything that may cause tummy disruptions or keep the cheese from fully melting. I love me some Tillamook cheddar, but use what you like best!

How to make Smash Breakfast Tacos
- Slice the green onions and grate the cheese (on the small side if you can). I use the small grating holes so the cheese melts quicker.
- Warm a large nonstick skillet on the stove over medium heat
- Have your ingredients at the ready. This happens fast just like a batch of fried rice!
Frying the tacos
- Pour a teaspoon of oil into the hot pan.
- When the oil runs easily in the pan, drop 2 tablespoons of sliced green onions in the middle of the oil and saute for a minute.
- Then, crack an egg on top of the green onions. Using the corner of your spatula, scramble the egg just enough to mix the yolk into the whites. Sprinkle over a pinch of salt. Add pepper if you like! Cook for 1-2 minutes until it is mostly set on the bottom but still runny on top.
- Next, place a tortilla on top of the egg and cook for 30 seconds. Press the tortilla down with your hand to evenly spread the egg across the whole tortilla. You may see a little squish out the sides, and that's okay!
- Slip the spatula under the egg, flip the taco over, and sprinkle 1-2 tablespoons of shredded cheese on half of the egg, then fold it in half... like a taco!
- Next, drop 1-2 teaspoons of oil in the pan and set the taco on top of the oil to crisp up the tortilla. Cook for 2-3 minutes, flip, and cook for another 2-3 minutes.
- If your skillet is large enough, you can do more than one at a time.
Making a fried cheese shell
In lieu of or in addition to the cheese on the inside, you can easily add a crunchy cheese shell to the outside.
- Once you've folded the taco in half and fried it some additional oil on both sides, spread 2 tablespoons of shredded cheese in the pan the same width as the taco.
- Then, place the taco on top of the cheese. Let it cook for 2-3 minutes.
- Add more shredded cheese to the pan alongside the taco fold, and flip the taco over onto the additional cheese.
- Cook 2-3 minutes to toast and crisp up the cheese! It will crisp more as it cools.
FAQ's
If you'd like to add meat to the Smash Breakfast Taco, I recommend either a half slice of bacon or Canadian bacon added with the cheese. Or, if you'd like to use breakfast sausage, cook and crumble your portion and sprinkle it on top of the egg just after scrambling before it has fully set.
Some complimentary toppings are sour cream, salsa, avocado, and fresh cilantro.
Storage
Leftover tacos do not hold up well, so I don't recommend saving them. Thankfully, they're quick enough to make exactly what you need when you need it.

Ingredients
- 4 corn tortilla shells
- 4 eggs
- 1 cup finely shredded cheddar cheese
- ¼ cup sliced green onions
- salt to taste
Instructions
- Warm a large nonstick skillet on the stove over medium heat.
- Add 1 teaspoon of olive oil to the pan. When the oil is warm, add 1-2 tablespoons of sliced green onions and saute for 2-3 minutes.
- Crack one egg onto the green onions and slightly scramble the yolk and whites with the corner of the spatula. Don't let the egg spread out too far. Try to keep it the size of the tortilla. Sprinkle with a pinch of salt.
- When the bottom of the egg is set but the top is still runny, lay one tortilla on top and press down with your hand to help it evenly adhere to the egg.
- Cook 1-2 minutes then flip it over and sprinkle 2 tablespoons of finely shredded cheese over one half, then fold it in half. Add 2 teaspoons of oil to the pan and set the taco on top to fry for 3 minutes. Flip it over and fry the other side for about 3 minutes. Serve as is or add hot sauce and avocado slices.
For a crispy, cheesy outer shell
- Once you've folded the taco in half and added a little oil to the pan, spread 2 tablespoons of shredded cheese in the pan the same width as the taco and place it on top.
- Cook for 2-3 minutes.
- Add more shredded cheese to the pan and flip the taco over onto the additional cheese. Cook 2-3 minutes to toast and crisp up the cheese! This tastes great served with sour cream and salsa.
