Simple Roasted Potatoes

Description

Crispy, creamy, poppable little tater nuggets. You definitely will want to double this recipe! Yukon gold, heart-healthy olive oil, and the perfect mix of seasonings make up these simple roasted potatoes.


Ingredients

  • 2 lb Yukon Gold potatoes, or yellow potatoes, chopped into even pieces
  • 1/4 cup olive oil
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 - 2 teaspoons salt
  • 1/2 - 1 teaspoon pepper


Instructions

  1. Preheat the oven to 450°.
  2. In a large bowl toss the chopped potato pieces with the oil and then the seasonings.
  3. Pour them out onto a lined sheet pan spreading them out as much as possible.
  4. Roast for 25 minutes and then flip and stir the potatoes
  5. Roast for 15 - 20 minutes more.
