Read below for some important information about a few of the ingredients used to make this fantastic Thai-inspired pork patty bowl.
Pork - These Thai-inspired pork patties use ground pork, NOT ground pork sausage which comes preseasoned and has a higher fat content.
Sesame seeds - I like to use a combination of black and white sesame seeds for the pork patties. Not only does it look lovely, but black sesame seeds offer many health benefits! If you can't find the black sesame seeds, it's ok to use all white. I ordered mine from Amazon, and I'm so happy I did! I put them on everything now.
Fresh ginger - For the best flavor, use fresh! You'll only need a small knob of ginger for this. The easiest way to peel it is to scrape the thin skin away with the edge of a spoon. To mince, slice into planks, then sticks. Turn the pile to the side and continue slicing it into tiny pieces. Alternatively, use the kind found in a tube. It's in paste form but will use the same measurement.
Fish sauce - It became a game-changer when I first learned how to use fish sauce. It levels up the umami flavor in a dish. Maybe you've heard the French term "Je ne sais quio?" which simply translates to "I don't know" but has a more complex meaning of "I don't know what the heck is in this dish, but it's friggin' delicious!" Not all fish sauces are created equal, which can be scary when you're unsure what to use, and I recommend doing a little research before you buy. I recently came across this fabulous blog, Hot Thai Kitchen, with a great post explaining everything you need to know to make an informed purchasing decision. Currently, I'm using a brand called Squid, but I also really like Red Boat. I have made these pork patties without the fish sauce, and it does not ruin the dish, but adding the fish sauce makes it something special!
Fresh herbs - I'm using Thai basil and cilantro. Mint would be a nice addition as well. Cilantro goes in the patties. Any other fresh herbs will be garnish for the rice bowl.
For the sauce - Simple sauce of Sriracha, sweet chili, mayo, and lime juice.

In detail – how to make this dish
- Mince the ginger and cilantro. It's ok to use the softer cilantro stems in the mince. Peel the skin off the ginger by scraping it with the edge of a spoon.
- In a bowl, combine the minced ginger, minced cilantro, soy sauce, sesame seeds, egg, and dry seasonings. Stir all these ingredients until they are combined well. Add the ground pork to the bowl by pinching off smaller pieces. Then toss the pork pieces all around to coat them with the other ingredients.
- Continue gently blending the ground pork mixture with your hands until everything is thoroughly combined. This mixture will feel very soft and wet, which is different from a regular meatball mixture because there is no breading to hold it together in this recipe. Refrigerate for 30 minutes; it will firm up enough to form patties.
- While the pork mixture is in the refrigerator, prepare the rest of the ingredients for the dish. Pick more cilantro leaves and Thai basil for garnishes. Lime wedges are a must! You can use whatever you like for the vegetables. Same with the rice. You can make white, brown, or even coconut rice. Ideas for vegetables: cucumber, bell peppers, carrots, bean sprouts, shredded cabbage, green onions, etc. These can be raw or sauteed. A fried egg or a 6-minute egg will definitely add a little zhuzh to your bowl! Now is a good time to assemble the sauce as well.
- Making the sauce: In a small bowl, stir together the mayonnaise, sweet chili sauce, sriracha, and a squeeze of lime juice.
- When the Thai-inspired pork patty mixture has cooled in the fridge long enough, preheat the oven to 375° F and prepare your sheet pan. With your hands, form 8-10 small patties of the mixture, and space them out on the sheet pan. Bake them for about 13 minutes.
- Assemble your Thai-inspired pork patty bowl. Fill a bowl with rice. Top it with a handful of your favorite vegetables, an egg, and 2-3 patties. Drizzle the sweet and spicy mayo on top and finish with fresh Thai basil, cilantro, and crushed peanuts.

Ingredients
- 1 lb ground pork
- 1 egg
- ¼ cup minced cilantro, plus more for garnish
- 1 tablespoon soy sauce
- 2 tablespoons sesame seeds
- 1 teaspoon garlic powder
- ½ teaspoon fresh minced ginger
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon red pepper flakes
Sweet and spicy mayo sauce
- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce like Mae Ploy
- 1-2 teaspoons sriracha or garlic chili paste
- 1-2 teaspoons fresh squeezed lime juice
Accompaniments
- rice
- fried egg or hardboiled egg
- fresh or sauteed vegetables
- fresh herbs like Thai basil, cilantro, or mint
- crushed peanuts
- Sesame seeds
Instructions
- Combine all of the ingredients except the pork to a medium sized bowl and stir to combine.
- Add the pork to the bowl by pinching pieces off and dropping them into the bowl as well.
- Using your hands, gently combine the pork with the other ingredients.
- Refrigerate this mixture for at least 30 minutes. Preheat the oven to 350°F.
- When the pork mixture is ready, form flat patties and lay them out evenly on a lined sheet pan.
- Bake for 12 minutes or until the patty reaches 155°.
- Enjoy with a bowl of rice and your favorite veggies.
Sweet and spicy mayonnaise
- In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Let sit for 20 minutes before eating.
