It's finally summertime! The sun is out, the berries are poppin' off the vine and I get to eat one of my favorite desserts for the next few months. The flavor (and price) of summer berries can't be beaten and I'm thrilled about it. I will give you all the details to make this 5 minute treat so you can see what all the excitement is about.

Berries - I typically like using a combination of raspberries, strawberries, and blueberries. This time the farmers market had ripe blackberries so I swapped out the strawberries. Feel free to use what you prefer, whether it's a medley of berries or simply one type.
Wash the delicate berries carefully by gently placing them into a generously sized, smooth-bottomed colander. Setting the water flow to half strength, gently tilt the colander from side to side, ensuring that each berry receives a rinse. Do not agitate them too vigorously and avoid overcrowding the strainer. When rinsed, transfer the berries onto a towel or multiple layers of absorbent paper towels, allowing them to lightly soak up any remaining water. Tenderly pat the top of the berries with another piece of paper towel. Once their rinsed, transfer them into the container of your choosing.
Zest - This recipe calls for lime zest, but you can use lemon as well. You'll need a microplane or cheese grater to remove the zest. You'll want to peel away only the top green part, leaving the white bitter pith behind. If you are in the market for a new kitchen tool, the microplane is one of my favorites. It gets used weekly, is low in cost, and lasts for years.
Honey - I am relatively new to the honey world. I've always had a honey bear on hand through the years for guests or the random recipe that calls for it, but really never cared for the flavor. In the last few years, I've had the opportunity and access to a local Pacific Northwest business that sells honey and it has seriously changed my life! I learned that bees source honey from all different types of plants, and each honey has a different flavor.
Grocery stores will normally sell clover honey and occasionally blackberry honey. In the past, I believed that honey was made with blackberries in it, but no. It is honey that comes from bees who forage their nectar from the flowers of blackberry bushes. You can also get honey sourced from pumpkin, radish, coriander, my all time favorite meadowfoam flower, and much more! Each honey has a subtle but noticeable difference in flavor. I enjoy the meadowfoam flower honey the most because it tastes like marshmallows!

Tools for the job
- Colander
- Paper towel or cloth towels
- Small bowl
- Zesting tool like microplane or cheese grater
How to make this dish - the details
- Gently wash all the berries to remove bugs and dirt and drain on paper towels until (mostly) dry.
- Zest ½ teaspoon of lime zest per 1 cup serving of berries.
- When the berries are dried, add them to a small bowl. Sprinkle the lime zest over the top, and then drizzle about 1 teaspoon of honey over the top. If you don't have a honey wand, try using a fork to achieve the thin streams of honey all over the berries.
