Smash Breakfast Tacos

Description

A crispy fried corn tortilla sandwiched around a quickly scrambled egg and seasoned with fresh green onions and creamy melted cheddar cheese.


Ingredients

  • 4 corn tortilla shells
  • 4 eggs
  • 1 cup finely shredded cheddar cheese
  • 1/4 cup sliced green onions
  • salt to taste


Instructions

  1. Warm a large nonstick skillet on the stove over medium heat.
  2. Add 1 teaspoon of olive oil to the pan. When the oil is warm, add 1-2 tablespoons of sliced green onions and saute for 2-3 minutes.
  3. Crack one egg onto the green onions and slightly scramble the yolk and whites with the corner of the spatula. Don't let the egg spread out too far. Try to keep it the size of the tortilla. Sprinkle with a pinch of salt.
  4. When the bottom of the egg is set but the top is still runny, lay one tortilla on top and press down with your hand to help it evenly adhere to the egg.
  5. Cook 1-2 minutes then flip it over and sprinkle 2 tablespoons of finely shredded cheese over one half, then fold it in half. Add 2 teaspoons of oil to the pan and set the taco on top to fry for 3 minutes. Flip it over and fry the other side for about 3 minutes. Serve as is or add hot sauce and avocado slices.

For a crispy, cheesy outer shell

  1. Once you've folded the taco in half and added a little oil to the pan, spread 2 tablespoons of shredded cheese in the pan the same width as the taco and place it on top.
  2. Cook for 2-3 minutes.
  3. Add more shredded cheese to the pan and flip the taco over onto the additional cheese. Cook 2-3 minutes to toast and crisp up the cheese! This tastes great served with sour cream and salsa.
