Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 3 ounces of tomato paste
  • 2 (14.5 ounce) cans of white beans, drained and rinsed
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • 3 cups mozzarella cheese, shredded (12 ounces)

Optional toppings

  • sliced black olives
  • diced green pepper
  • mushrooms
  • chopped spinach
  • diced fresh onion
  • pepperoni, ham, or Italian sausage
  • Any other pizza topping your heart desires!


Instructions

  1. Preheat the oven to 400°F.
  2. Warm an oven-safe skillet on the stove over medium heat and add the olive oil. When the oil moves easily in the pan, add the diced onions.
  3. Cook and stir the onions until they are translucent, then add the drained white beans, tomato paste, and seasonings to the skillet.
  4. Stir the beans and tomato paste together, then add 3/4 cup of water. Bring to a boil, then simmer for 5 minutes.
  5. When the beans have warmed through, take the skillet off the heat. Top the tomato and beans with the shredded mozzarella (and other optional toppings SEE NOTE) and bake in the oven for 20 minutes or until bubbles form along the edges and the cheese has started to brown.

Notes

If you add more pizza toppings to the bean and tomato bake, use 2-4 tablespoons of each ingredient and no more than 1 cup of additional toppings to keep the balance with the cheese and beans.
