Brunch Burger

Description

Get ready for the best burger ever made with a brioche bun, juicy, flavorful patty, maple bacon, hashbrown coins, and, finished with a runny fried egg.


Ingredients

  • 6-8 baby gold potatoes or fingerlings, sliced into rounds
  • 1/2 cup sliced onion
  • 1 tablespoon olive oil
  • 2 tablespoons mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 burger patties
  • 4 slices maple bacon
  • 2 slices provolone cheese
  • 2 eggs
  • 2 brioche buns
  • 4 teaspoons unsalted butter
  • lettuce leaves
  • sliced tomatoes
  • salt
  • black pepper


Instructions

  1. Warm a nonstick skillet on the stove over medium heat. Add one tablespoon of oil to the pan, followed by the sliced potatoes, onions, and a few pinches of salt and pepper.
  2. Cook the potatoes until they have started to brown a little on one side, stirring, flipping them over, and covering the skillet with a lid.
  3. Continue to cook the potatoes for about five more minutes, then remove the lid and test a potato by piercing it with a fork. If the potatoes have softened, move on to the next step; otherwise, add the lid back for a few more minutes.
  4. As soon as you can pierce the potatoes with a fork, stir and flip them again. Continue to cook the potatoes and onions until they're brown and starting to crisp a little, about 10 minutes. Then, remove them from the heat.
  5. Next, combine the mayonnaise and Dijon mustard and set aside.
  6. Start cooking the burger patties however you prefer. You can reuse the potato skillet or cook them on the grill.
  7. While the burger patties are cooking, warm a nonstick skillet on the stove over medium-high heat. Butter both sides of the buns and lay them face down in the pan. Toast them for a few minutes and then set them aside.
  8. Wipe out the pan, add a teaspoon of oil, and crack the eggs into the pan. Season with a pinch of salt and pepper. For runny eggs, cook them in the pan until the whites start to set, then add a few tablespoons of water to the pan and cover with a lid. Cook for 1-2 minutes more, then lift the lid to check if all the whites have thoroughly cooked. Remove the egg from the pan before the yellow parts start to cook.

Building the brunch burger

  1. Spread a few teaspoons of creamy Dijon on the top or bottom bun.
  2. Add a few pieces of lettuce, sliced tomato, and then 2 slices of maple bacon to the bottom bun.
  3. Follow the bacon with the burger patty, then the provolone cheese, a helping of potato hash browns, and then a runny egg. Place the top bun on the sandwich and enjoy your fabulous and messy burger with someone you love!
